Italian Basil Pesto Recipes

Chicken Breast with Squash

Broiled tender chicken breast with cubed summer squash and Anne's Italian Basil Pesto, sprinkled with Parmesan cheese.

Ingredients:
4 medium skinless, boneless chicken breasts, 2 Tbs Anne's Italian Basil Pesto, 2 cups chopped zucchini and/or summer squash, 2 Tbs shredded Asiago or Parmesan cheese, 1 Tbs olive oil

In a large nonstick skillet cook chicken in hot oil over medium heat for 4 minutes. Turn chicken; add zucchini and/or squash. Cook for 4 to 6 minutes more or until the chicken is tender and no longer pink (170ºF.) and squash is crisp-tender, stirring squash gently once or twice. Transfer chicken and squash to 4 dinner plates. Spread Anne's Basil Pesto over chicken; sprinkle with Asiago or Parmesan cheese.

Hurray! I went yesterday and bought only one jar of each kind, because last week I had finally made it over to the Metropolitan Market on Queen Anne; since I don't get that way often, I had bought six of each! So now I'm loaded, with I hope an endless supply. Thanks very much,
