Q: How long will the Basil Pesto last?
A: Since our pesto is a fresh food, always keep it refrigerated. Both the Italian Basil Pesto and its vegan version are good for about 4 to 6 weeks in the fridge. For optimum flavor, we recommend that you enjoy them as fresh as possible!

Q: Can I freeze the Basil Pesto?
A: Both the Italian Basil Pesto and the Green Vegan Pesto freeze very well. If it’s the glass jar version, simply put the whole jar in the freezer, scoop out what you need, and put the jar back. Because we don’t add water to our recipes, it won’t break.

Q: How do I store my Basil Pesto properly?
A: Fresh Basil Pesto tastes great, and because it's fresh it's also sensitive.
This means (especially in summer):
Keep it away from direct sunlight.
Keep it refrigerated at all times.
To avoid oxidation, close the lid after scooping out what you need.
HINT: For extended life, you can add a thin layer of olive oil on top of the pesto.

Q: What’s the difference between your Italian Basil Pesto and the Asian Basil Pesto?
A: The Italian Basil Pesto contains Parmesan and Pecorino cheese. The Asian Basil Pesto is cheese-free. Instead it contains miso, a healthy culinary paste from Japan. It is a vegan product.

Q: How long will the Spanish Tomato Pesto last?
A: The Spanish Tomato Pesto will last for 3 months or longer. Freezing will change its consistency slightly, but its great taste won't change.

Q: Can I freeze the Spanish Tomato Pesto?
A: The Spanish Tomato Pesto freezes well, too. However, you will notice a slight structural change. In most cases, freezing isn't necessary because it has an extended shelf life.

Q: What is Miso?
A: Miso is a traditional Japanese food produced by fermenting rice, soybeans, with salt and the mold Koji. The result is a typically thick paste used in sauces and spreads, to pickle vegetables or meats, and mixed with soup stock and served as miso soup, a Japanese culinary staple. High in protein and rich in vitamins and minerals, Miso is widely used in Japan, both in traditional and modern cooking, and is now quite common elsewhere in the world.

Q: Why do you sell your pesto in glass containers?
A: We like the European tradition that high quality food is offered in glass jars, not in plastic containers: they are safe against chemical reactions and are neutral to the taste.
Glass jars can be reused, too.

Q: I love your pesto and would like to give it as a gift to my sister, my brother’s family, and my friends in Australia. How can I travel safely with the pesto?
A: We know what you're talking about!
For us, visiting Europe always means bringing “tons” of pesto to relatives, business partners and friends as a gift.
Here’s how we do it:
1. We freeze the Basil Pesto because of its sensitivity. We use the Spanish Tomato Pesto out of the fridge.
2. We cover the jars in bubble wrap. Everything goes into a plastic bag. (If possible, we also use a box as a container.) We pack the bag (and box) in the center of the suitcase surrounded by T-shirts, socks, etc.
Hint: The Spanish Tomato Pesto makes a great, unusual gift. People are always surprised by its unique flavor and many uses.

Q: We’re going camping (hiking, sailing, fishing) next week. Which pesto would you recommend?
A: The Basil Pestos are a good choice if you can make sure that they stay chilled and away from sunlight, especially for a special camping meal such as pasta with pesto.
The Spanish Tomato Pesto is just perfect: It also lasts for a couple of days without refrigeration; however, keep it away from sunlight and heat. It has endless uses, from pasta to fish, veggies, cheese or crackers. You can dilute it or mix with almost anything. With its strong taste it’s the perfect companion for all kind of grilled food.
